A light-hearted Interview with Peppe had an exclusive interview with Peppe, the Executive Chef and Director of Pavarotti Ristorante & Pizzeria, in Kamala, Phuket. His restaurant offers Italian cuisine and distinctive homemade pasta with that great authentic Italian taste. For Signor Gigantino, cooking is a direct communication between himself and his guests!

Please tell us a wee bit about your culinary education?

I got a Chef’s Diploma in Nocera Superiore in Salerno Province, Campania, Italy.

Why did you want to be a chef?

I’ve always enjoyed cooking and love to share my passion and creations with other people. It’s a labour of love.

What are your favourite cooking gadgets?

I don’t know a chef anywhere who can get by without a good sharp knife and a large cutting board. Other than that I am not really into gadgets, they just clutter up the kitchen. I’d much rather have a portion of fine Parmesan cheese. THAT I can work with.

What is your best match between Food and Drink?

I think Fettuccine truffle sauce served with Nero D’avola Cusumano wine is the sublime!

If you had your own cooking show, what would you call it?
That is an interesting question. How about “Little Peppe”? Seems like a decent title, after all, I would be teaching others to cook just like me, right?

Which dish is the best sexual aphrodisiac?
Aha! You saucy minx! What about sliced melon with Provolone cheese on a nice Risotto? To drink: a good pink champagne. That usually makes me hot. Would you like to try it with me now?

What is you favourite food?
I am a very easy going sort of man so basic foods from mother earth appeal to me. Sliced spaghetti with beans cooked farmer style is a favourite.

How do you feel when you put your chef’s hat on?
Taller of course!

If the world was going to the end in one minute, what would be the last meal you would like to eat before you were dead?
It is? Oh dear! Not much time to prepare it then so I better make it simple. How about Fettucine with Tiger Prawns in Limoncello sauce? I love the taste of lemon.
